Aspen Grille featuring new chef Garrett Overlee

The Aspen Grille, Lory Student Center, and the hospitality management program would like to introduce the CSU campus to Chef Garrett Overlee, the new Chef Instructor at the Aspen Grille Restaurant.

Overlee will prepare a special menu on Thursday, Dec. 1 and Friday, Dec. 2.

Overlee graduated from the CSU Restaurant and Resort Management Program in 2005. He then expanded his education, graduating from Johnson and Wales University with an A.S. degree in culinary science. He has put both degrees to good use as the sous chef at the former Stone House Grill in Fort Collins and as the director of catering at the Brown Palace in Denver.

He returned to Fort Collins in 2010 as the chef de cuisine at the Beach House. Overlee joined the LSC/Aspen Grille partnership in Early September and has fast become an integral part of the operation as the chef/instructor.

Menu

First Course: Creamy Shrimp Bisque garnished with a sautéed ginger and garlic gulf prawn and smoked chili oil

Second Course: Braised Buffalo Barbacoa Enchiladas. Colorado buffalo grilled and braised with Mexican chilies and spices then served in warm corn tortillas. Topped with a savory pumpkin and red chili puree and finished with Colorado goat cheese.

Third Course: Warm bread pudding topped with Crème Anglaise and fresh berries.

$13.45

Non-alcoholic beverage included. Our regular menu will not be served.
